Salvia desoleana is an exclusive endemic species of Sardinia similar to the better known Salvia sclarea. The plant is suitable for cultivation on poor and dry soils, while on well-drained soils rich in nutrients it can reach two meters in height with trunks up to 4 or 5 centimeters thick. Its leaves are really large, they give off a very pungent aroma, not like the plush on the surface of the leaf which is soft, almost velvety. Some of the leaves of the larger specimens comfortably cover an entire hand. The plant is decidedly productive considering that the leaf and the buds are edible. In Sardinia, its homeland, it is widely used in the kitchen, breaded in breadcrumbs and fried, or sautéed in a pan with extra virgin olive oil and garlic.
