In any romantic relationship, the first “I love you” is always a momentous milestone. When my now-husband first professed those three words, we were listening to sappy songs while watching the sunset and enjoying vanilla cones from the Golden Arches. Of course, I echoed his sentiments, and the rest is history. I’ll forever associate Mickey D’s soft serve with our love story’s butterfly-filled beginnings. But just as our partnership has evolved over the years, so have our palates, particularly when it comes to cones. Speaking of the V-shaped vessels, you won’t want to miss contributor Caitlin McCulloch’s piece in The Hot List (page 88), highlighting six undeniably cool cones, including a hand-held, house-made waffle cone filled with candied brown sugar bacon, fried chicken tenders, avocado, lettuce, and cool ranch from Cluck N Cone; and an activated charcoal Oreo cookie cone swirled with black sesame and Hokkaido milk ice cream from Tokyo Cream. Though I’ll never say no to a classic cake cone with machine-made froyo, the more upscale offerings featured here are undoubtedly a yes. Invite your nearest and dearest and go on a “cone crawl” to try them all! In Get to Know, “Two’s Company,” Nelly Kislyanka interviews three local couples whose journeys to the altar prove that real romance can happen at any age and at any time. 'Tis the season for romance! We're ushering in<br />

Valentine's Day with three love stories that'll warm<br />

your heart despite the <strong>February</strong> chill.<br />

laughing, and having fun together. The<br />

evening ended with a first kiss under the<br />

stars. Rico asked Shannon to marry him<br />

in 2020, and they tied the knot in 2021.<br />

“Rodeo magic is a real thing!”<br />

Favorite date spot: Thursday is our<br />

weekly date night. We typically stay in<br />

Folsom and rotate between Land Ocean<br />

and Scott’s Seafood Roundhouse.<br />

Secrets to success: Since we both<br />

come from failed marriages, we<br />

feel strongly that it starts with good<br />

communication. In our relationship,<br />

we talk about everything—even when<br />

it’s a difficult or sensitive topic. During<br />

premarital counseling, our pastor<br />

recommended we hold business<br />

meetings to address business issues<br />

such as finances, parenting, and home<br />

responsibilities. This keeps the business<br />

side of us separate from our dating/<br />

fun side. We also love to travel and<br />

make quarterly trips a priority. We think<br />

it’s important to show our children that<br />

relationships take quality time, nurturing,<br />

Some love stories begin in the<br />

unlikeliest of places. In 2014, Shannon<br />

and Rico met at a divorce care group<br />

through Hills Church. Both were<br />

navigating their newly single lives and<br />

not considering a relationship. So, they<br />

became friends—working out and<br />

traveling together, running into each<br />

other at community events, and even<br />

playing on the same softball team. “Still,<br />

it never crossed either of our minds to<br />

date one another,” says Shannon. Until<br />

the 2019 Folsom Pro Rodeo, that is. After<br />

inviting Rico to help at the event, where<br />

Shannon was working, they spent a<br />

magical evening dancing in the saloon,<br />

and hard work.<br />

What's your favorite thing about your<br />

partner?<br />

Shannon: Rico is kind, thoughtful, loving,<br />

and an amazing listener. He’s always fun,<br />

and I still get butterflies when he walks<br />

into the room. He’s also an amazing<br />

stepdad to my three kids.<br />

Rico: Shannon is always positive and<br />

makes me smile. She’s beautiful inside<br />

and out.<br />

Charley Cornell<br />

It may sound “cheesy,” but MaryLisa and<br />

Charley first connected because of their<br />

mutual passion for great cheese. In 2015,<br />

MaryLisa was content with a career she loved<br />

(looking after her herd of goats and owning<br />

Jollity Farm). “Life was good,” she says. But<br />

then it got better! While volunteering with<br />

the Gold Country Dairy Goat Association at a<br />

show, Charley—a fantastic cheesemaker—<br />

sent her a Facebook message. He wanted<br />

to donate cheese to the Jollity Farm raffle<br />

table. From there, they began chatting and<br />

spending time together. A year later, they<br />

got engaged while on a cheese trail journey<br />

along the coast and eventually married<br />

on MaryLisa’s farm surrounded by her<br />

beloved goats.<br />

Gonzales<br />

Rose and Steven’s story is one<br />

of triumph. Despite the odds of<br />

young love (they met in eighth<br />

grade) and teen pregnancy, their<br />

relationship has stood the test<br />

of time. Nearly three decades<br />

later, they cherish the life<br />

they’ve built—with four children,<br />

a grandbaby, and a thriving<br />

business—more than anything.<br />

But getting here was no easy<br />

task. The loss, near-death<br />

experiences, and struggles that<br />

face a young family threatened<br />

to tear them apart. “We<br />

[eventually] realized how much<br />

our marriage meant and really<br />

worked together to be better as<br />

a team,” says Rose.<br />

Favorite date spot: Waking up<br />

early (before the kids), drinking<br />

coffee, and reading in the<br />

same room without talking is<br />

a special connection we have.<br />

Occasionally, we go on lunch<br />

dates to Flame & Fire while the<br />

kids are at school.<br />

Secrets to success: Work as a<br />

team and put pride away; learn<br />

to listen; keep the passion alive;<br />

and find things in common (ours<br />

include going to the gym and<br />

personal development).<br />

about your partner?<br />

Rose: Steven is my biggest<br />

supporter—always pushing<br />

me to be better, encouraging<br />

me, and reminding me of the<br />

possibilities I’m capable of—<br />

continues to “make moves” on<br />

me, and is a great dad!<br />

Steven: Rose always wants to<br />

help other people, strives to be<br />

the best person she can be, and<br />

lives every day trying to make<br />

drawn to watercolor?<br />

I was five years old and<br />

in kindergarten when I<br />

accidentally discovered<br />

that yellow and red<br />

paint create orange. I ran<br />

home from school and<br />

told my parents I wanted<br />

to become an artist.<br />

The feeling of mixing<br />

those colors put me on<br />

the path of trusting my<br />

heart enough to endure<br />

rejection in life.<br />

Describe your<br />

artistic process.<br />

Passion and inspiration<br />

for the subject, which<br />

incubates inside my soul.<br />

After preparing a drawing,<br />

I’m ready to paint,<br />

usually upside down and<br />

sideways—developing<br />

intuition, stepping<br />

back, evaluating, and<br />

painting the journey. It’s<br />

challenging, because each<br />

painting is intuitive and<br />

there’s no road map to tell<br />

me where to go.<br />

What inspires you?<br />

I find inspiration with<br />

anything that heals<br />

one’s soul: nature, dogs,<br />

bikes, things that bloom,<br />

buildings, light, and<br />

shadow. When you open<br />

your heart to feelings<br />

and vision there’s a world<br />

of opportunity waiting<br />

for you.<br />

oving to Roseville in 2000, Anna<br />

Rolin first studied watercolor<br />

under Pat Abraham, whom she<br />

attributes as one of her biggest<br />

influences. “Right now, I’m following my<br />

own curiosity; the more I paint, the<br />

more I learn,” she shares. “I try to start a<br />

painting before I finish one, so that [I]<br />

always [have something to] work on.”<br />

Why did you choose watercolor?<br />

I love the feeling of dipping my brush<br />

into a well of water and pigment and<br />

watching it spread across the paper<br />

as I paint. Watercolor flows and is<br />

transparent. It’s basically just water,<br />

paint, brushes, and paper—beautifully<br />

simple—but if you have to fix something,<br />

you can only do so much, or your<br />

painting could be ruined.<br />

It all began<br />

when I<br />

took a<br />

class and<br />

became<br />

intrigued with the beauty<br />

watercolor can produce. I dedicated<br />

myself to learning the craft and<br />

took numerous classes. Lots of<br />

practice later, and I learned to<br />

master the water, control the<br />

mistakes, and produce works I feel<br />

good about.<br />

What are your favorite aspects<br />

of watercolor?<br />

The flow of the paint, which can<br />

create an ethereal feel; or being able<br />

to switch techniques and produce<br />

a painting of exacting details—the<br />

choice is yours.<br />

Describe your process.<br />

After a light sketch and<br />

beginning with the “wet on<br />

wet” approach, I often mix<br />

colors directly onto the<br />

paper. As the paper dries,<br />

I move from soft brush to<br />

dry brush and work from<br />

lighter to darker colors.<br />

Because my subject matter is<br />

representational of landmark<br />

buildings, historic scenes,<br />

or events, my paintings<br />

usually have more detail than<br />

traditional watercolors.<br />

How do you avoid artist's<br />

block?<br />

Everywhere I go, I’m looking<br />

for scenes and imagery for<br />

future paintings. While driving<br />

down the interstate this<br />

morning, I began painting in<br />

my head the beautiful cloud<br />

formation that came to view.<br />

Other times, I'll quickly sketch<br />

or snap photos of antique<br />

automobiles that I see.<br />

beloved mandarin season. Attendees<br />

other delights—in addition to live<br />

music, kids’ activities, and local vendor<br />

axe to break through<br />

Q: What should I take into<br />

consideration when deciding to<br />

do pet hospice?<br />

A: When your pet is diagnosed with<br />

a terminal condition, it’s important<br />

to understand disease progression<br />

and ways to maintain their quality<br />

of life. A discussion with your<br />

veterinarian can help make sure<br />

your pet is kept comfortable with<br />

pain medication or adaptations at<br />

home. When pain can no longer<br />

be managed, your pet is immobile,<br />

they no longer enjoy their favorite<br />

activities, the bad days outnumber<br />

the good, or there is risk of<br />

traumatic death, then timing of<br />

euthanasia should be considered.<br />

Lastly, it’s important to prepare<br />

your family members, as not<br />

everyone may agree, due to beliefs<br />

surrounding euthanasia, guilt over<br />

primary caretaker responsibility,<br />

and inability or unwillingness to<br />

accept declining quality of life. In<br />

addition, children experience grief<br />

differently depending on age and<br />

Before<br />

El Dorado Hills resident Lisa P. has been<br />

renovating her home, room by room,<br />

for more than a decade—and she’s hired<br />

local Granite Bay firm Designs With You<br />

In Mind (designswithyouinmind.net) for<br />

each and every project.<br />

Before the refresh, her home<br />

featured traditional brown finishes<br />

and was starting to feel dated; not to<br />

mention, it was no longer functioning<br />

for her family’s daily routine. Cathy<br />

Tonks of Designs With You In<br />

Mind stepped in to complete the<br />

transformation, which resulted in a<br />

home that boasts a transitional style<br />

with a calming feel.<br />

“Our overarching goal was to make<br />

sure everything we did flowed to allow<br />

our clients to entertain guests in luxury,”<br />

Tonks says. “Like all our projects, we<br />

also used the finest materials and top<br />

appliance brands.”<br />

Tonks’ design needed to improve the<br />

house’s overall function. Her solutions<br />

included turning the rarely-used<br />

formal dining room into an inspiring<br />

home office; taking a section of the<br />

downstairs area to create a “lady cave,”<br />

which provides an escape for Lisa to<br />

relax and unwind; installing new floors<br />

throughout the home; creating an openconcept<br />

layout to better connect the<br />

kitchen, dining room, and living room;<br />

and maximizing the available bright<br />

natural light whenever possible.<br />

For the kitchen renovation, Tonks<br />

says the cabinet layout was working<br />

well, and both the cabinets and<br />

hardware were in excellent condition,<br />

so they modified and painted the<br />

cabinets for a refresh. Additionally, they added soft-close<br />

hinges into the kitchen cabinets and drawers for an elevated<br />

feeling while also protecting the cabinet finishes. They also<br />

replaced the kitchen hood over the range—though when it<br />

was removed, the intake was offset, so they built a soffit and<br />

facade to make it work. Other kitchen upgrades included new<br />

tile, countertops, crown molding, and baseboards. The cool<br />

color palette added to it was then continued into the adjacent<br />

living room, where the design team added new window<br />

coverings, furnishings, artwork, and plants to create a cozy<br />

and comfortable gathering space.<br />

The home has bonus rooms downstairs, including a second<br />

family room that contained a kitchenette and a bed. Lisa’s son<br />

was staying in this room, which was inconvenient when the<br />

family had guests over. “Her son needed his own space, so we<br />

moved a major wall out, giving the homeowners’ better access<br />

to the kitchenette and a space for their son with a full ensuite<br />

bathroom, plus Lisa’s ‘lady cave,’ and a powder room,” Tonks<br />

says. “We infused some of the client’s personality into the<br />

powder bath through custom wallpaper and photos of her two<br />

adorable pups.”<br />

Moving outdoors, they created a space for Lisa to entertain<br />

off the pool. “We gave the family an upscale coastal-style<br />

kitchen, [and in the] back patio area off the pool, installed<br />

herringbone porcelain tile with texture to prevent slipping,<br />

painted existing railing, added new furniture, and painted the<br />

home’s exterior.”<br />

One of the more recent projects was the upstairs renovation,<br />

which had a four-to-five-month timeline. “We redid both<br />

daughters’ bedrooms and updated the jack-n-jill bathroom,”<br />

Tonks says. “Specifically, we removed the bathtub and replaced<br />

it with a tiled shower, painted the cabinets, and updated the<br />

hardware with soft-close hinges.”<br />

Lisa’s home is now a calming oasis perfect for entertaining<br />

her friends and family. “I highly recommend working<br />

with Designs With You In Mind!” Lisa says. “I have worked<br />

with Cathy for over 10 years to slowly transform my entire<br />

house into my dream space. She has an amazing gift of<br />

understanding people’s personal styles but also stretching it<br />

beyond anything you could ever imagine!”<br />

An Evening of Insight (EOI) is not just about raising money, it’s about raising<br />

about A Touch of Understanding and the impact we make on children’s lives every<br />

twenty years of experience in joyfully navigating her own life’s journey with blindness.<br />

For over 26 years, ATOU has been helping children understand, appreciate and<br />

respect one another, despite differences. Our workshops help schoolchildren accept<br />

and include their peers with disabilities and those who seem different for any reason.<br />

These workshops improve the way students relate to themselves and others. One<br />

student said it best, “I get it now! I can be a buddy, not a bully!”<br />

“Filet all day”—that’s what the shabby chic sign in my living room says.<br />

Folsom’s Sutter Street Steakhouse has you in good hands if<br />

you’re a filet fan (who isn’t?). Their certified Black Angus Filet (six or<br />

12-ounce) is specially prepared at temperatures more than 1,000 degrees,<br />

which means two things when it’s cooked medium rare: juicy and<br />

delicious. Your tender filet comes with garlic mashed potatoes and herb<br />

compound butter, and you could do worse than add some tasty cheddar<br />

potato cakes, sautéed spinach, or asparagus on the side. But let’s talk<br />

appetizers: I wholeheartedly recommend starting with the warm brie<br />

and bacon jam with arugula and grilled ciabatta. Oh mama. And maybe,<br />

just maybe, finishing things off with a vanilla bean crème brulée. I’m not<br />

going to tell you your life. You know in your heart it’s only right.<br />

experience, thanks to the Brazilian cuisine known<br />

as churrascaria, where cowboys or “gauchos” slowroast<br />

their skill. At Flame & Fire, roving servers bring<br />

huge skewers of barbecued meats to the table and<br />

carve it directly onto your plate. And when I say<br />

skewers, what I really mean are swords. And I’m<br />

charcuterie, and my favorite: pao de queijo (Brazilian<br />

cheese bread), aka, the definition of deliciousness.<br />

delicious signature cocktail made with cachaça,<br />

Q1227 is a relative newcomer to Roseville, but this chef-driven restaurant has been<br />

making big waves ever since opening four months into the pandemic. It says right<br />

there on the wall “food is our language of love”—folks, this is a restaurant that gets<br />

us. Elevated comfort food is what they’re about, and steak-wise, you’re in truly good<br />

hands: there’s excellent a la carte Angus beef, like the three-ounce Japanese wagyu,<br />

18-ounce cowboy ribeye, and 10-ounce filet tenderloin. But the secret steak star of<br />

the menu is the Ribeye Cap: all the flavor of a ribeye with the delicateness of a<br />

tenderloin, aka, the kind of steak your butcher keeps for themselves because it’s so<br />

good. Chef Q cooks it to juicy perfection and serves it atop a mouthwatering mix<br />

of fire-roasted tomatoes, garden fresh spinach, wild mushrooms, and Maldon Sea<br />

Salt. If you’re feeling fancy, you can add fresh-shaved Velarde truffles (when available).<br />

Speaking of appetizers, it’s my moral duty to inform you of the Q1227 Chicken Fried<br />

Lobster Bites, served with creole remoulade and Chef Q’s season all. Don’t cry when<br />

Red Hawk Casino. Try their hardwood grilled<br />

Filet Mignon Florentine: six ounces of<br />

pure perfection alongside mashed potatoes,<br />

spinach, beef reduction, and crispy onions.<br />

When it comes to sides, it’s hard to resist the<br />

siren song of their house macaroni and cheese<br />

(you’re only human!), but the Old Bay wedge<br />

fries are comfort food at its finest and should<br />

be mandatory—especially if you worship Old<br />

Bay Seasoning like I do. And when it comes<br />

to dessert names, let’s just say Henry’s has<br />

a flair for understatement. “Chocolate and<br />

Nuts”? I mean, I guess. Unless it’s house-made<br />

chocolate malt ice cream, crème anglaise,<br />

brownie, brown butter almond cake, candied<br />

nuts, and whipped cream. Well, why didn’t you<br />

at the Smith Flat House was once the<br />

opening to the Blue Lead Mine dating back<br />

to the 1800s. Fast forward to today, and the<br />

And if we’re talking appetizers, you could do<br />

Almost 30 years.<br />

Top beef-buying tip?<br />

Ask your butcher! Most are knowledgeable and can assist with<br />

finding the perfect cut and offering cooking instructions. When<br />

selecting a steak, it’s about the marbling (the white specks that<br />

add all the flavor and juiciness) and if the “right” fats are left<br />

on the steak. When you cook your steak over high heat, those<br />

specks of fat leave pockets in the meat that aid in its tenderness.<br />

What lesser-known cuts of beef do you recommend?<br />

Bistro filets (aka teres major)—small steaks that come from<br />

the front shoulder clod; in my opinion, they’re one of the most<br />

versatile and tender cuts at a price that’s right. They’re lean and<br />

great grilled on the BBQ, sliced thin for stir fry, cut for stew meat,<br />

or added to chili, stroganoff, or fajitas.<br />

What cuts give people the most bang for their buck?<br />

Cross-rib roasts come from the front shoulder of a steer and are<br />

an under-utilized cut that’s surprisingly tender and incredibly<br />

flavorful.<br />

Top steak cooking tips?<br />

Keep it simple. Lightly rub extra virgin olive oil on the steak and<br />

season it with kosher salt and coarsely ground black pepper.<br />

My favorite steak is a New York strip loin served at medium<br />

temperature with a hard sear on the outside; the flavor and<br />

tenderness are unmatched. The “chew” of the steak is also<br />

important; you want something that offers flavor and tenderness<br />

without feeling like you’re doing cardio! With that said, doneness<br />

of steaks is widely subjective and is not “one size fits all.”<br />

sizzle platter. (It’s also the house specialty, and you can see why.) If you fancy walking on<br />

Since 2011, Placerville’s The Independent Restaurant & Bar has been serving up<br />

high-quality cuisine and libations. A local favorite is the Niman Ranch Ribeye, 14<br />

ounces of hand-cut, marbled meat served with a demi-glace and flash-fried onion rings—a<br />

mouthwatering “big ole steak” cooked to perfection that cuts like butter. I’m also in love with<br />

the truffled mac and cheese, but don’t be fooled, their turnip fries are a head-turner (you<br />

read that right). If you favor a cocktail to accompany your classic ribeye, might I recommend<br />

kicking it old-school in a new-school way with the Smoked Molasses Old Fashioned: Four<br />

Roses Single Barrel Bourbon, Angostura bitters, hickory smoked molasses syrup, and a<br />

flamed orange peel. When it comes to dessert, I’m very much into the silky-smooth and<br />

dangerously decadent chocolate pot de crème with mocha whipped cream. Divine!<br />

El Dorado’s Poor Red's Bar-B-Q is<br />

another historic locale, and these folks<br />

serve up liquid gold in the form of their<br />

signature cocktail the Golden Cadillac,<br />

later, they’re still pouring liquid gold<br />

for locals and serving up delicious,<br />

barbecued steak, chicken, and ribs (just<br />

like the original sign says), with a menu<br />

that favors locally sourced ingredients<br />

and quality meat. The true mark of a<br />

great barbecued steak is when it can<br />

make the humbler cuts of beef sing,<br />

and Poor Red’s Blackened Spiced<br />

Flank Steak can more than carry<br />

a tune. An eight-ounce flank steak<br />

butter and cilantro, served with their<br />

house salad, a baked potato, and<br />

The manifestations of our collective<br />

human culture are rarely as<br />

ubiquitously loved as food. The<br />

culinary arts tap into eons-old (and<br />

modern) traditions and deliver a primal<br />

gratification that simultaneously satisfy<br />

both the caveman and the aristocrat within us all.<br />

Some cuisines, however, infuse a rich<br />

history and cultural tradition into their flavors,<br />

transporting you to different times and places. Few<br />

cuisines do this more than Mexican.<br />

Newly opened La Popular is a collaboration between<br />

Grupo Carolo (one of Mexico City’s most recognized<br />

restauranteurs) and the local Eureka! Group. Led by<br />

Chef César de la Parra from Mexico City, the menu is an<br />

upscale take on Mexican classics that evoke the origins<br />

of the gastronomy as well as the country’s cultural<br />

nuances—inspiring us to share and forget our worries<br />

until mañana. Authentic staples are elevated by a chefdriven<br />

evolution and served in lively, lush environs<br />

alongside warm, welcoming service.<br />

The drink menu is an impressive<br />

modern craft cocktail experience that<br />

brings the tastiest old-world spirits into<br />

the contemporary era using up-to-theminute<br />

bartending techniques—think<br />

smoke bubbles that pop with a whisp on<br />

lemongrass to infuse your Oaxacan rum,<br />

like in the showstopping Oaxacan Jellyfish,<br />

which also comes with pineapple, lime,<br />

blue lemongrass, and coconut cream. With<br />

over 80 labels of tequilas and mezcals, you<br />

can bet they know how to mix up a stellar<br />

margarita, too.<br />

Appetizers include an innovative take<br />

on familiar favorites, like chipotle bean<br />

dip, nachos with hand-cut tortilla chips,<br />

heirloom tomato & oyster mushroom<br />

ceviche, and queso fundido with chorizo<br />

alongside house-made tortillas.<br />

The street tacos are also a must-try. I<br />

was swayed from my normal go-to after<br />

reading the description of the ribeye<br />

offering: “ribeye and handmade corn<br />

tortillas…that’s it, trust us.” So, I took the<br />

leap of faith. The ribeye was delicious,<br />

though the tortilla seemed slightly too<br />

large for the dish. The house salsas were<br />

flavorful, too, and I loved that the simple<br />

tacos encouraged me to add the garnishes<br />

in a traditional Mexican street taco way. A<br />

huge thumbs-up for authenticity.<br />

I also tried the charred whole fish<br />

divorciados (the red adobo was much<br />

tastier than the green, in my opinion), the<br />

ribeye fajitas (a non-traditional staple—<br />

charred jalapeños and potatoes topped<br />

with melted manchego, bacon, guacamole,<br />

sour cream, and pico de gallo—with<br />

a most markedly upscale flavor), and<br />

the habanero BBQ ribs (another nottraditional<br />

take executed beautifully).<br />

While the menu was overall fantastic, I<br />

couldn’t do justice to the experience without<br />

elaborating on the drinks. The agave-inspired<br />

cocktails boast techniques I’ve only seen on<br />

the recent Netflix series Drink Masters—from<br />

“caviar” pearls to infused smoke bubbles.<br />

Each boozy beverage expounds on an agave<br />

spirit and adds a clever craft twist. Again, I was<br />

tempted with a minimal description of the<br />

Yucatán Toucan (“clarified mezcal punch…<br />

trust the jungle bird”) and immediately<br />

ordered one. It was amazing. I also tried the<br />

Desert Rose—a balanced cocktail full of<br />

warmth, freshness, tartness, and sweetness—<br />

that included cinnamon-infused Licor 43,<br />

hibiscus lime-infused tequila, mezcal, prickly<br />

pear, pomegranate, and lemon.<br />

For dessert, the tres leches cake and<br />

churros tied a pretty, Mexican bow on the<br />

entire experience. While they weren’t jawdropping,<br />

they were simple and sweet.<br />

Overall, La Popular surprised with<br />

their ability to make the old new and<br />

brought an experience worthy of any<br />

modern foodie’s praise.<br />

Say “aloha” to your new favorite Hawaiian BBQ spot: Big Island Hawaiian<br />

BBQ, where everything is made to order using fresh ingredients. It’s like<br />

being in Hawaii...without having to pack, catch a flight, and shake sand<br />

out of your clothes. They offer so many different dishes, it’s hard to<br />

choose. Fortunately, their family meals feed four and come inclusive of rice,<br />

mac salad, shredded cabbage, and two proteins, like the popular kalua pork<br />

and chicken katsu (both great choices!). My personal pick? The Kalua Island<br />

Fries, because fries—especially with creamy sriracha mayo and a heaping<br />

helping of shredded, pull-apart pork—are always a good idea. For the main<br />

attraction, choose from katsu chicken curry, kalbi short ribs, spam & eggs, or<br />

loco moco, to name a few. I went with the Teriyaki Chicken Plate, and their<br />

sauce (all sauces are crafted in-house, btw!) was one of the best I’ve had.<br />

Portions are generous, so if you’re looking for something a little smaller, go<br />

for their “Make It Mini” plates; or, for littles, one of the kids’ meals. Oh, and<br />

don’t forget the appetizers! Because crispy shrimp, pan-fried potstickers, and<br />
