KLONDIKE CHEESE COMPANY

Production & Distribution Facility

Family-owned and operated since 1925, Klondike manufactures award-winning Feta, Muenster, Brick and Havarti cheeses in Monroe, WI using state-of-the-art equipment and traditional family recipes. Our ongoing expansion project, which included a state-of-the-art precast concrete addition with a 70,000-gallon brine tank, has allowed Klondike to quadruple production of Brick, Muenster and Havarti cheese using highly specialized automation equipment sourced from Europe. Kraemer Brothers worked closely with the new equipment installation teams to keep the project on schedule, despite the language barrier and differing work habits and procedures.

Because so many of the new systems are automated, the plant increased manufacturing efficiency without adding staff or incurring extra labor costs. The project began in March of 2017 and by May of 2018, the plant was producing cheese in its new 41,000 square foot addition.

Kraemer Brothers used a Vitrified Flooring System that best suited this application. The vitrified tiles are known for high-durability, aesthetic, non-absorbent, antimicrobial, chemically-resistant qualities as well as being easy to clean.

Kraemer Brothers most recent project for this long term client consisted of a dry storage addition. Two additional loading docks and another overhead door allows Klondike Cheese to use the dry storage area for loading and unloading shipping supplies while designating the docks in the cooler for loading and unloading dairy products, ultimately streamlining their shipping and warehousing. A 16,500 square foot project, this project grows Klondike Cheese’s facility to over 241,000 square feet!

Dairy Manufacturing & Yogurt Production Facility

This dairy manufacturing project involved a 20,000-square-foot interior remodel to convert existing spaces for Schreiber Foods occurring over a nine month period while yogurt production, packaging and distribution were in operation.
A 24-foot tall, 5,600-square-foot, insulated metal panel tank room was constructed inside an existing building, as well as thousands of square feet of remodeling in other areas. The superstructure of the tank room consisted of welded stainless steel tubes, and the underground plumbing system required excavations up to 16-feet deep.

Approximately 10,000 square feet of concrete floors were demolished and replaced. Over 10,000 square feet of vitreous tile was installed over new and existing floors.

We performed a complete gut and remodel of the tank/vat room, filter room, fill room, packaging room and process room. This work was performed in conjunction with the owner’s process piping contractor all using CMP (clean management practices).

Other accomplishments include the shoring and reinforcing an old concrete deck; installing three massive, 8-foot-tall, sixty-foot-long structural steel trusses inside the existing building; constructing several steel structures to support an existing and four new, very large and heavy (21-25’ long) RTU’s (roof top units); pouring over 300 cubic yards of concrete; installing a 5,000-square-foot roof infill to mitigate snow load, and providing $3 million in specialty stainless steel piping and HVAC systems, all in less than 5 months.

In 2022 Kraemer Brothers returned to Schreiber Foods’ West Plant in Richland Center to build out a 2,000 square foot blast cooler addition. Schreiber Foods was able to remain fully operational during the remodeling process.

New Facilities & Additions

Kraemer Brothers has completed many industrial projects for Deppe Enterprises over our 40-year relationship. Deppe Enterprises first selected Kraemer Brothers in 1980 to construct a warehouse addition, used as an equipment plant at the time. Our second project for the client consisted of a large 225,000 square foot warehouse with mezzanine and office space. In 1998 and the four years following, Kraemer Brothers constructed five projects for Deppe Enterprises, totaling over 400,000 square feet! The 2001 project, which was leased to The Toro Company, features steel siding with split-face concrete block around the base of the building and was classified as the largest building in Sauk County at the time. Our most recent project in 2017 consisted of completing a 30,000 square foot freezer build-out for Foremost Farms that is used to store butter. With the completion of the freezer project, it brings up the total number of square feet completed for our long-term client to 675,000!

Addition & Remodel

WINDSOR
Originally constructed by Kraemer Brothers in 1998, the Neesvig’s Meat Processing & Distribution Facility in the Windsor Business Park needed an expansion off their original facility to meet growing demand. Kraemer Brothers constructed a 14,450 square foot addition and renovation in 2017, allowing Neesvig’s to become one of the few fresh protein companies in the country that can process both red meats and fresh seafood under a single roof. Consisting of a new shipping dock and additional cooler and freezer space, this project allowed management and operations teams, along with all in-bound and outbound logistics, to move into one centralized headquarters. This has significantly enhanced Neesvig’s ability to serve some of the finest restaurants, hotels, and private clubs in the Midwest.

DEFOREST

To accommodate the firm’s expanding fulfillment operations, a freezer addition and renovation was constructed at an existing 120,000 square foot warehouse in DeForest in 2012. The 26,000 square foot freezer addition holds over 2,800 pallets of food product, while the renovation features over 13,000 square feet of cooler and 2,500 square feet of office space to the existing 37,000 square foot production space. A state-of-the-art BRC certified facility, it features climate-controlled shipping and storage, kitting and assembly, voice-directed picking, and automated sort and ship services.

Neesvig’s and its seafood division, Empire Fish, were acquired by Fortune Fish & Gourmet in 2020, however still operate out of both facilities.

CEDAR GROVE CHEESE

Cold Storage Addition

Our long-time friends and neighbors at Cedar Grove Cheese, just down the road from Kraemer Brothers in Plain, are enjoying full use of their new cold storage addition. The building’s exterior is constructed out of split-face concrete block along with center scored CMU and metal ribbed siding. Featuring a loading dock for easily transporting the cheese, this facility also has an insulated sectional overhead door that seamlessly connects the new addition to the existing facility. To keep the products cold during storage, multiple ceiling-mounted, high-output evaporators are equipped in the cooler. Kraemer Brothers built the first addition to their plant in 1994, and this latest significantly increases the cheese plant’s capacity of traditional and specialty artisanal cheeses every year – and every morning they buy 30,000 pounds of milk from over 30 dairy farmers in southwest Wisconsin.

BIORIGINAL (OMEGA PROTEINS)

Whey Production Facility

Drawing upon our 60 years of experience in the dairy industry, Kraemer Brothers simultaneously constructed three additions for Omega Proteins’ (formerly Wisconsin Specialty Proteins) production facility in Reedsburg, WI with no interruption to ongoing manufacturing operations. Bioriginal, a subsidiary of Omega Proteins and the producer of Simply Tera’s whey protein powder, was able to double their production capacity with this addition. A total of 12,380 square feet, the first addition included an office expansion and a maintenance and shipping area for the wet and dryer processes. The second addition included a silo vestibule extension, silo pads, and an ingredient manufacturing area while the third addition included an intake bay and break area. Needing to keep the area clean and free of contamination, we were able to control the spread of excess construction dust to maintain sanitation in the plant. Simply Tera’s whey protein powder has been acquired by Carrington Farms from Bioriginal. Saputo Dairy Foods USA is currently operating out of this facility in Reedsburg.
